
How it started…
I hit my head one day in 2017 and life wasn’t the same again. Cooking became hard. I became dizzy often. Some days are worse than others. Some days are awesome, so I cook on those days.
High-nutrient ingredient prep
I feel best on the weekends when I have a chance to rest. Instead of meal-prepping for an entire week, I prep high-nutrient ingredients and use them to build quick meals when I’m not feeling as great.
I typically don’t think of whole meals when I prep ingredients. I buy high-nutrient ingredients, and then I think of how to put them in meals later. At any given time, I have a lot of random stuff in my freezer, and I can use combinations for all sorts of things.
My brain hurts… so I might as well make my life as easy as possible!
I do not usually eat land meat, but I am not a vegetarian. I try to eat fish or seafood once in a while, and dairy sparingly for flavor (mostly just cheese). I eat red meat less than three times a year, probably. I live with my grade-school son, and he eats meat, so I try to include meat in his dinners twice a week or so. Even then, it is very little.

Why is this site named “Skunk and Mouse Cottage?”
I live in a very small suburban house that looks just like every other mini house on my street. In order to make myself feel better, I decided to call it a cottage, because it just sounds fancier. I read somewhere that people sometimes named their cottages after animals in the area. Well, let’s face it: the two most active species in my area are mice and skunks. And so, Skunk and Mouse Cottage it was.
